To enhance and strengthen nutrition education at the primary school level throughout the Caribbean, sample lesson plans are provided for primary school aged children between the ages of 5 and 12 years old. Diets of high calorie, low nutrient foods with little amounts of vegetables, fruits and pulses, have created a paradox of obesity and under-nutrition. The CARICOM food security project seeks to improve nutrition and health outcomes of vulnerable segments (women, children and elderly) of CARICOM nations through an integrated approach linking agriculture, food and health, using a “Farm to Fork” approach.en
