Technical bulletin on small millets food products
Abstract
This bulletin supplies information about the nutritive value of small millets along with recipes for their use. As part of the larger project, “Scaling Up Small Millet Post-Harvest and Nutritious Food Products” value added products derived from small millets are important for promoting increased household consumption. The tiny "grain" (which is actually a seed) is gluten-free and packed with vitamins and minerals. Small Millets are rich sources of nutrients such as magnesium, calcium, manganese, phosphorus, iron and antioxidants. The booklet contains many recipes, each accompanied by a table outlining the nutrients specific to it.
