Abstract
Focusing on the liberalization period (1990s/2000s), this paper compares country studies with respect to policy and the restructuring of the retail, processing, wholesaling and farm‐sector segments of the food industry. Public sector intervention moved country food systems from ʹtraditionalʹ to ʹmodernizationʹ, and the ʹliberalizationʹ period pushed the process further. Many governments in the study countries intervened early in the initial modernization of retail by investing in and setting up retail chains. This detailed study provides information on transitions and restructuring of the food industry in several countries, including China, South Africa, Mexico, Indonesia, India, Turkey and Zambia.
