Monograph on the nutritional value of triticale protein - (1) discusses the IDRC-supported development project to develop a protein rich food cereal grain (triticale) by plant breeding (crossing) of wheat and rye, and the methodology for evaluation of plant proteins (2) reviews agricultural research and nutrition research on the nutritional value of triticale, wheat, and rye; nutritional inhibitors and toxins; grain processing and food enrichment.
